For centuries, garlic has been used as a medicine. Recent research has shown that this strongly flavored member of the onion family has outstanding healing properties. - 50 g almonds
- 3 garlic cloves
- 1 tomato
- Coarse salt, black pepper
- 1 tsp paprika
- 5 Tbs olive oil
- 1 Tbs white wine vinegar
Start this finger licking sauce by peeling and roasting the almonds. Using a pestle and a mortar, pound the almonds and the garlic.
Skin and deseed the tomatoes and add to the garlic and almond mixture. Mix together until it forms a smooth paste; season to taste with salt and pepper. Add the olive oil, paprika and vinegar.
Romesco Sauce is a good accompaniment to broiled or baked fish and fried or baked vegetables.
- 12 large garlic cloves
- 100 ml vegetable stock
- 50 g butter
- 30 g whole wheat flour
- 150 ml milk
Halve the garlic cloves, simmer for about 10 minutes in the vegetable stock then puree.
Melt the butter , stir in the flour and add the milk, stirring well.
Then add the garlic puree and simmer for 5 minutes. Garlic puree makes a good accompaniment to broiled lamb.
- 4 fresh garlic bulbs
- Black pepper
- Coarse salt
- 8 slices whole wheat toasting bread
- 80 g butter
Preheat the oven to 250 grade C.
Place the garlic bulbs on a baking sheet lined with parchment paper, and bake in the oven until the skins have darkened.
Peel the individual cloves and spread with butter and the baked garlic. Baked garlic is a good accompaniment to Mediterranean vegetables.
Marinated Mozzarella with Garlic
- 4 packet Mozzarella
- A few radicchio lettuce
- 2 small red onions
- 1 red chili pepper
- 8 garlic cloves 1/4 tsp coarse salt
- 1 bunch flat-leafed parsley
- 1 bunch basil leaves
- 2 Tbs lemon juice
- 120 ml olive oil
Slice the Mozzarella and arrange on a bed of radicchio. Slice the onions and chili into fine rings and scatter over the Mozzarella.
Leave for at least 1 hour.
Serve with warm garlic bread.
