Truly a work of art that of Cream Cheese-Chocolate Brownies: the perfect marriage of deep chocolate swirled with cream cheese for an intensely rich, delicious flavor. The cream cheese adds to the richness of the mix- and brownies are nothing if not almost too rich and gooey- but also lends a pleasantly sour note which keeps all that chocolate and sugar from being too cloying.
For 24 serves, you will need this quantity for each ingredient:
- 100 g unsweetened chocolate
- 225 g unsalted butter
- 100 g unsalted margarine
- 275 g flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 large eggs
- 1 teaspoon pure vanilla extract
- 450 g sugar
- 100 g chopped walnuts
- 225 g cream cheese, softened
- 225 g confectioners’ sugar (icing sugar)
Method of cooking
Preheat oven to 160°C/Gas Mark 3. Start the preparation of Cream Cheese-Chocolate Brownies, by greasing and flouring a 35X30 cm sheet cake pan (baking tin).
Then continue by melting chocolate, 100 g butter and margarine in top half of a double boil over boiling water, stirring to blend.
When melted, remove from heat and allow to cool.
Sift together flour, baking soda and salt and set aside. In a mixing bowl, beat 2 eggs and vanilla until frothy.
Afterwards, add sugar and continue beating until thick and lemon-colored.
Continue by gradually beating in flour mixture until well-combined. Stir in chocolate mixture, scraping down sides of bowl as necessary. When well blended, pour into prepared pan. Smooth top and sprinkle with 50 g walnuts. Set aside.
Beat cream cheese and remaining butter until light and fluffy. Add remaining egg and beat to combine. Add confectioners’ sugar and beat until well blended. But not too much otherwise it looses the flavor of cream cheese.
Spread cream cheese mixture over top of brownies, leaving 1 cm border all around, using a rubber spatula to smooth the surface.
Sprinkle with remaining walnuts.
Place in preheated oven and bake for 30-40 minutes or until set. Remove from oven and cool on a wire rack for two hours before cutting into squares.
