Pizza with Shrimp and Sun-dried Tomatoes

Pizza with Shrimp and Sun-dried Tomatoes is a kind of reinvention of pizza, one of the most favorite dishes of everyone. The dough of this special pizza you can make in a food processor with an electric mixer or by hand. But if you want a therapeutic session, try kneading the dough and the warmth of your hand will help the dough to rise. If you are in a particularly bad mood and really take it out on your dough you will get an even better rise. Alternatively  you could forget the whole operation by making your pizza base from a packet of ciabatta bread mix, which you can customize with a bit of extra oil. BUT light sleepers should note that cheese and shellfish combinations are not conductive to dream-free nights!

The inventor of this pizza Wolfgang Puck,  has always looked for clear sharp flavors to put on his pizza. Use sun-dried tomatoes that have been packed in oil or rehydrate some of the very dry ones in boiling water.

For 5 pizzas, ingredients needed are:

  • 1 recipe Pizza Dough divided into four equal pieces (the next recipe)
  • 2 tablespoons chilli oil
  • 100 g grated Italian fontina cheese
  • 225 g grated mozzarella or an equal amount sliced fresh mozzarella
  • 4 tablespoons blanched garlic, chopped
  • 1 medium red onion, thinly sliced
  • 4 tablespoons chopped fresh basil, plus 4 small sprigs for garnish
  • 20 to 24 medium shrimp (prawns) peeled
  • 4 tablespoons sun-dried tomatoes, thinly sliced


Method of cooking

Before you are ready to bake the pizzas, preheat the oven with a pizza stone inside to 250°C/ Gas Mark 10 for 30 minutes.

Roll or stretch the dough, a quarter at a time, into 18-20 cm circle and place it on a lightly floured wooden peel.

For each pizza, brush dough with chilli oil. Top it with a quarter of the  fontina and mozzarella, leaving a 1cm border along the edge. Top cheese evenly with a quarter with a quarter of the garlic, red onion, basil, shrimp and tomatoes. Assemble the 3 remaining pizzas in the same way. Slide the pizza on to the hot stone and bake it for 10 to 12 minutes, or until the cheese is bubbling.

Do you need some help in preparing the dough of “Pizza with Shrimp and Sun-dried Tomatoes”? The ingredients that you need are: 

  • 350g all-purpose [plain] flour
  • 1 tablespoon honey
  • 2 tablespoons olive oil
  • 175 ml cool water
  • 1 package fresh or dry yeast
  • 4 tablespoons warm water


Method of cooking

Place the flour in a food processor. Combine salt, honey, olive oil and cool water in a small bowl or measuring cup. Mix well.

Dissolve yeast in warm water and let prove for 10 minutes.

With the motor running, slowly pour the salt and honey liquid through the feed tube. Then pour in the dissolved yeast. Process until the dough forms a ball on the blade. If it is sticky, add sprinklings of flour.

Transfer the dough to a lightly floured surface and knead until it is smooth. Place in a buttered bowl and allow the dough to rest, covered, for 30 minutes.

Divide the dough into 4 equal parts. Roll each piece into a smooth, tight ball. Place on a flat sheet or dish, cover with a damp towel and refrigerate.

One hour before baking, remove the dough from the refrigerator and let it come to room temperature. Lightly flour a work surface. Using the fleshy part of the fingertips, flatted each ball of dough into a circle. Turn dough over and repeat. Lift the dough from the work surface and gently stretch the edges, working clockwise to form a 18-20 cm circle. Repeat with the other 3 pieces. place the circles on a wooden peel or on a baking sheets, and build the pizzas as desired.

Regarding presentation, slide the pizza on to warm plates, garnish with basil sprigs and serve immediately. Cut it into wedges to eat.
