Sun-seeking traveler and food taster in Andalusia!

By visiting different parts, you can take part in several unique popular events and sample a range of delicious gastronomic products.

If you go in Granada, Andalusia, you will  surely taste White Garlic Gazpacho.  When cooking the recipe, its flavors will bring back memories from your voyage in Andalusia. It is a cheap dish and except the fact that it is delicious, it is healthy too. Ingredients necessary for this dish are:

  • 200 g bean flour
  • 1.2 kg potatoes
  • 2 garlic cloves
  • 1/2 c wine vinegar
  • Olive oil
  • Rock salt

Cooking method

Grind the bean flour in a mortar with the garlic cloves and a few grains of rock salt, adding a little water and vinegar until it makes a paste. Then add the oil, little by little so that the cream doesn’t curdle, diluting it with more water to get a light cream. This soup in its “birthplace” is served very cold, accompanied by roasted potatoes or, sometimes, fried bread croutons.

Salted cod cooked with onions is a dish from Cazorla, Andalusia. The below ingredients will give it the typical flavor you have tried there:

  • 300 g of salted cod fillet (desalt in water one day before)
  • 100 g of extra virgin olive oil
  • Flour
  • ½ kg of white onion
  • 250 g of red and green pepper
  • 3 garlic cloves
  • 250 g of ripe peeled tomatoes
  • 1 cup of white wine
  • 1 splash of vinegar
  • Salt
  • Black pepper
  • Bay
  • Thyme
  • Black olives to decorate

First, drain and dry the salted cod well. Proceed to heat the oil in a deep pot which can be covered. Coat the salted cod with flour. Fry it on both sides until slightly golden.

In the same oil (remove the salted cod), make a stir-fry with the following ingredients in the indicated order: sliced garlic; once the garlic is golden, throw the onion cut into julienne strips in; then the pepper also cut into julienne strips, and the peeled and diced tomatoes. Then add spices and salt to taste. Add the white wine and vinegar. Add the salted cod and let the liquid reduce for a few minutes.

And to prepare Alfajores, we need these ingredients:


  • 2 kg honey.
  • 1 kg bread, toasted and ground into crumbs.
  • 3/4 kg flour.
  • 1/2 kg ground almonds.
  • Ground cinnamon.
  • Lemon peel (to taste).

Cooking method

 In a saucepan dissolve the honey with a little bit of water and add the other ingredients, mixing them together over heat. Let it rest and, when the dough is warm, form it into shapes of your choice and coat the shapes in sugar.
